Hong Kong fine dining restaurant Wing has been named the recipient of the Gin Mare Art of Hospitality Award 2025, one of the pre-announced accolades ahead of The World’s 50 Best Restaurants annual ceremony, which will be held this June in Turin, Italy.
This latest honour further cements Wing’s reputation as one of Asia’s most exciting culinary destinations. The restaurant debuted on The World’s 50 Best Restaurants list in 2024 at No.20, clinching the Highest New Entry Award, and has since garnered global attention for its progressive, but deeply rooted approach to Chinese gastronomy.

Located in the heart of Hong Kong’s Central district, Wing is the creation of Chef Vicky Cheng, whose career began in French fine dining before he found his culinary calling in reinterpreting the cuisine of his heritage. The restaurant evolved from a midnight test kitchen hosted in the space below his first venue, Vea, into a standalone fine dining concept with no borders or creative limits.
Named after Cheng’s Chinese name, Wing is a tribute to values like perseverance, heritage, and renewal. These ideas are woven throughout the restaurant’s 11-course seasonal tasting menu, which is as much a storybook of Chinese culinary philosophy as it is a showcase of technique. Dishes might include aged local pigeon with Shaoxing wine, crab roe rice with flower crab, or double-boiled fish maw soup – all executed with rigorous technique and striking presentation.

While the food is central, Wing’s acclaim also rests on its deeply thoughtful approach to hospitality. Guests are guided through the tasting journey by a team known for its grace, warmth and fluency in the restaurant’s narrative. From sourcing rare ingredients to curating custom wine and tea pairings, the service underscores Cheng’s vision of fine dining as both personal and cultural storytelling.
“At Wing, hospitality isn’t an afterthought – it’s foundational,” said William Drew, Director of Content for The World’s 50 Best Restaurants. “The experience there goes far beyond the plate. It’s a complete immersion in modern Chinese identity and creativity, delivered with care and conviction.”
Cheng’s reinterpretation of Chinese cuisine doesn’t chase gimmicks. Instead, it’s guided by respect for classic techniques – such as double boiling, pickling and fermentation – and a desire to spotlight lesser-known regional traditions. That balance of heritage and modernity has made Wing a favourite among diners seeking a fresh yet authentic lens on Chinese fine dining.

“This recognition is an incredible honour and a reflection of the passion and dedication of my entire team,” said the chef. “We’re proud to represent Chinese cuisine at this level and to continue telling its stories in new ways.”
Olivia Flynn, Global Brand Manager at Gin Mare, praised the restaurant’s achievement: “Wing’s triumph in the Gin Mare Art of Hospitality Award is a testament to its exceptional service and welcoming atmosphere, which create truly unforgettable experiences.”
The Gin Mare Art of Hospitality Award is one of several special awards revealed in the lead-up to The World’s 50 Best Restaurants 2025 ceremony, which will be staged at Lingotto Fiere in Turin on 19 June 2025. The event will also include #50BestTalks, 50 Best Signature Sessions, and a Chefs’ Feast celebrating Piedmont’s local culinary treasures.
